Leftover Turkey Pie

My entry in the family cooking contest. Made from Thanksgiving leftover turkey.

Ingredients
  

  • 1 ea pie crust
  • 2 lb cooked and shredded turkey
  • 2 cup diced sharp cheddar cheese
  • 1 cup leftover green beans
  • 1 cup leftover carrots
  • ¼ cup leftover/cooked onions
  • 4 cups mashed potatoes
  • ¼ tsp poultry seasoning
  • salt and pepper to taste

Instructions
 

  • Prepare crusts according to crust directions.
  • Mix turkey, cheese, vegetables, seasonings in a bowl.
  • Spoon filling into pie crust.
  • Cover filling with mashed potatoes.
  • Cook until potatoes are golden on edges
